A celebration of the bounties of the sea, glossy ebony tendrils of capellini imbued with a subtle brininess came adorned with dollops of plump, sweet uni. Like supplicants around their deity, baby squid frozen in their final poses came encased in deep-fried shells of crunchy batter. Everything comes together in a whirlwind of gastronomic delight, making this one of the standout plates that is a must order.

Don’t expect strictly classics at modern Spanish restaurant Lumbre. Instead, you can look forward to Mediterranean flavours with a twist, such as this luxe riff on croquettes which sees enrapturingly crisp and crunchy on the outside, creamy within spheres decadently decorated with fresh uni.

@lumbre.sg brings the 🔥 with tender octopus and fatty hunks of Ibérico pork belly sunk into a seductively smoky and savoury chorizo foam. This variation of a Spanish stalwart is the crucible by which I judge Spanish restaurants by and it more than passes with flying colours.

Beehoon immediately comes to mind on the first bite, except this has been supercharged with flavour having been soaked in a tomato-pepper sauce and seafood stock for spoonfuls of smoky umaminess. Bits of tender calamari added texture to the soft noodles, and the smoked eel was lush, tender and sweet.
